What happens to a psychopomp when whatever culture/religion it's from dies out and there isn't anyone left in it's 'jurisdiction'?

We shall see

Regarding the Psychopomps; does which Psychopomp that comes to escort a person's soul to the afterlife depend on their religion or which region of the earth their bloodline comes from? or do they each get assigned a list of people to escort that day?

It's based on a number of factors, some of which are ones you mentioned.

yup

The robots talk about angels and divine beings. Did they develop their concept of religion on their own?

Not really. They know about human religion, and the religion of their creator, so they wanted to follow it.

As several figures from other religions/mythologies like Muut and Coyote appear in GKC, does this mean that other figures in other religions, like Christianity or Hinduism appear? Or is such fact essential to plot?

If it would add to the story and I think it's necessary, it could happen.

I don't think that sort of thing would add to the comic, really.

Do you think it is important to think of the religions, politics, afterlife possibilities and genereal world views the characters might have before starting a comic? Or can those be made up "on the way"?

If it helps define a character then you should probably keep a few things like that in mind.
